Today's menu consisted of a rice and lentil recipe that I have made a few times for the family I nanny for but have never tried. It was simple to throw together, though does take about an hour and fifteen minutes in the oven but you can ignore it while it cooks. (Score!)
Recipe :
3c Reduced Sodium Chicken Broth
3/4c Green Lentils
1/2c Brown Rice
1c Corn Kernels, frozen
1c Celery, finely chopped
1 Medium Onion, chopped
1tsp Italian Seasoning
1/4tsp Garlic, minced
1c Cheese, grated
1. Mix all ingredients, except cheese, in a baking dish
2. Cover with foil and bake for 45m at 350F
3. Remove foil, add cheese and bake for 10m.
This made six portions but we each ate two portions and D ate one portion as a main. If you were adding chicken or something else along with it, it could easily be enough for six as a side.
It's fabulous as a one dish meal that you can toss in the oven and forget about while you play with the kids or whatnot. You could spruce it up with more veggies or even chicken. And bonus : It freezes well, so you could make extra and then freeze for a quick meal!
