*note : I made these late one night for my husband who was bugging me for over a week for cookies and I forgot to take photos - I'll be sure to do that next time I toss a batch in the oven!*
350F for 10-12 minutes
1c butter or margarine, softened
1c peanut butter
1c sugar, white
2/3c sugar, brown
2 eggs
1tsp vanilla
2c flour
1c oatmeal (quick or old fashioned)
2tsp baking soda
1/2tsp salt
3c semi-sweet chocolate chips
1. Cream the butter, peanut butter, sugar and brown sugar together in mixer.
2. Add eggs and vanilla. Mix.
3. In separate bowl, combine flour, baking soda, salt and oats. Add to butter mixture.
4. Add chocolate chips and mix by hand.
5. Using a TBS measuring spoon, scoop out dough onto a baking sheet (you can fit 12 cookies, 3x4, on an average baking sheet. The cookies expand but not a ton. Roll the dough into balls and just slightly flatten.
6. Bake for 10-12m at 350F. Cookies come off the pan easier if you let them sit for 2-3 minutes before removing.
Makes about 5 dozen cookies.
I rolled all the dough into 1TBS sized balls. I baked two dozen but put the rest of the balls into the freezer on a cookie sheet. After a few hours, I transferred them to a ziploc container and put them back in the freezer. They freeze well and this way, I will have homemade cookies in 15 minutes if I need them!
I only had 2c chocolate chips but my husband didn't even mention the lack of chocolate chips so I think I would do only 2c next time as well. They add a little extra specialness to the cookies but this way,
